With fish, for me it's always malt vinegar. When I first moved to Washington state I thought it weird...a lot of people here eat their fries with tartar sauce! There's also a goop they call 'fry sauce' up here that, to the best I can figure, consists of a mix of ketchup and mayo. Never seen that anywhere else. But with a burger...usually ketchup.
